Didn't he start by saying "work front to back?!" Geez!!! Good video though. How'd they split it in half though?!

Meaning, when making your cuts to separate your primal cuts, work from front to back... not critical to start at the head and butcher back. Although, that's what I've always done with caribou (hanging), lop off the head, the front quarters, back straps, loins, rib cage, split the hams from the pelvis...

A good bow saw, cutting down the centerline will split the two halves.
